The grapes are sourced from the hills of the Adige and Vallagarina valleys in Trentino. Grapes were hand-harvested at the start of September. Chardonnay grapes were soft pressed to yield the best portion of must – after decanting for 10-12 hours this goes into stainless steel tanks for fermentation. The red grapes are harvested early to maintain good acidity levels, and are vinified as for rosé wines. After stabilistaion and clarification the wine undergoes a second fermentation (Charmat method).
