Doluca Sarafin Shiraz

£20.67

Rich and intense, showcasing abundant flavors of blackberry, damson plum, and blueberry. This is complemented by intricate savory hints of bacon fat, cracked black pepper, toffee, and dark chocolate. Long-lasting, soft, and generous, it concludes with a refreshing and spicy finish.

  • Appearance: Deep, dark ruby to intensely inky purple with violet highlights at the rim.
  • Aromas & Nose: Rich and highly aromatic. It opens with a core of ripe dark forest fruits like damson plum, raspberry, and blackberry. These fruit notes are layered with complex savory accents of black pepper, baking spices, smoky bacon fat, leather, and vanilla.
  • Palate & Taste: Full-bodied and concentrated. The palate closely mirrors the nose, leading with juicy, cooked dark berries, cassis, and plum. This transitions into sophisticated secondary notes of espresso coffee, toffee, and dark chocolate.
  • Structure & Finish: Balanced and smooth. Thanks to extended maceration during winemaking, it features well-integrated, polished medium tannins and fresh acidity. The finish is long, warming, and persistently fruity with lingering spicy undertones.
Winemaking & Aging Potential
  • Oak Treatment: Aged for 12 months in a combination of French (Seguin Moreau) and American (Demptos) oak barrels. This dual-oak aging softens the firm varietal tannins and imparts signature notes of vanilla and sweet spice.
  • Cellaring: Very approachable upon release, but possesses a solid structure giving it 6 to 7 years of aging potential from the vintage under proper cellaring conditions.
  • Serving Recommendation: To fully open up its rich bouquet and settle the bold structure, it is highly recommended to decant the wine for at least 30 minutes prior to serving.
