Situated near the Languedoc village of Saint Georges d’Orques (hence the image of St. Georges on the label) Domaine de L’Olibet’s vineyards are low-lying, at no more than 50m above sea level, with vines ranging from 10 to 70 years of age. Two types of terroir are behind the high reputation of the wines of Saint Georges d’Orques: the first being ancient Villafranchian soil, a red-ochre stony terroir of galets roulés (smooth rounded stones); the second a richer, deep silty soil. Across this terroir Domaine de L’Olibet have 22 parcels. Cabernet Sauvignon predominantly from Saint Martin undergoes traditional vinification; bunches are destemmed, fermentation with regular maceration lasts fifteen days and the wine is vinified without oak.
Perfumed, sweetly ripe fruit on the palate which melds into a savoury core of classic Cabernet Sauvignon blackcurranty fruit with a hint of capsicum. Shows ripe integrated tannins and good length.
