The Büyülübag winery was established by Alp Törüner on Avşa with a vision to grace the island’s indigenous grape variety ‘Adakarasi’ with international awareness and to exploit the potential of well-adapted grape varieties in the unique terroir. The island has a long history of viticulture and wine making, a unique micro-climate and a sandy-loam terroir that is truly expressed in its wines. Büyülübag currently has 20 hectares of vineyards consisting of Cabernet Sauvignon, Merlot, Syrah, Chardonnay and Adakarasi. The best fitted root stocks were chosen following soil climate analysis conducted in France.

Construction of the winery began in October 2004. In their four-level facility, there is a tasting room at the top level with a wonderful view. Production takes place between the other three levels; the grapes are processed on the first floor with grapes tipped onto the vibrating sorting table, then into the stem remover, the second vibrating sorting table and into a crusher. Crushed berries are drained into tanks on the next level. The barrel cellar is located below ground and water insulated having an average annual humidity of 70% and temperature of 14°. Barrels are Burgundy and Bordeaux style 225L French oak.

With their gravity flow winery, Büyülübag ensures that wine movement is slower and therefore gentler and more controllable. The resulting wine is better because it has been moved in a more delicate manner that preserves its inherent qualities.

Today Büyülübag produces stylish, elegant and rich wines that have already won medals at national and international wine competitions.
