Matured for eight months in French oak, this wine harmonizes the distinctive smoky intricacies of Fumé Blanc with a sumptuous, creamy profile that evokes the essence of a subtly oaked Chardonnay.
- Nose: Rich scents of melon, grapefruit, and citrus, beautifully layered with warming oak, vanilla, and patisserie.
- Palate: Full-bodied yet easy-drinking. A creamy, buttery mouthfeel—reminiscent of white Burgundy—balanced by crisp acidity and notes of toasted almond, pineapple, and subtle smoke.
- Winemaking Process: Crafted from late-harvest grapes. The unfiltered juice ferments sur lie in 225-liter French oak barrels. It is then stirred periodically (bâtonnage) and aged for 6 additional months in oak, followed by over a year of bottle-aging.
- Food Pairing: Excellent with goat cheese, grilled salmon, rich poultry, or as an aperitif.

Doluca Sarafin Fume Blanc has a full scent of vanilla, patisserie and cold butter. The palate shows a sweet-savory style with whiffs of toasted almond, all tied by a balanced acidity.
The grapes are crushed, using the“Sur lie” method in225 lt. barriqes. After 2-3 week of fermentation, thewine rests 2-3 more months on its lees during whichthe barrels are stirred periodically to maximize thecontact of the lees and the wine. The wine is then seperated from its lees and aged in oak barrels for another 6 months.
