Doluca Sarafin Fume Blanc
The grapes are crushed, using the“Sur lie” method in225 lt. barriqes. After 2-3 week of fermentation, thewine rests 2-3 more months on its lees during whichthe barrels are stirred periodically to maximize thecontact of the lees and the wine. The wine is then seperated from its lees and aged in oak barrels for another 6 months.
Sarafin Fume Blanc has a full scent of vanilla, patisserie and cold butter. The palate shows a sweet-savory style with whiffs of toasted almond, all tied by a balanced acidity.
