Produced with Sauvignon Blanc grapes infected with the Botrytis Cinarea “Noble rot” and harvested very late in the season for maksimum sugar maturity. Skim contact in 19 hecrolitres tanks than whole cluster pressing. Fermented at 13 – 15 degrees. The wine underwent gentle cross-flow filtration. Natural sedimentation. No fining agent or enzymes were used.
